But what about making your own homemade pizza?
The following recipe won't disappoint you!
It has been given to me by a master in pizza-making, a professional pizzaiolo.
Of course, it's not enough to have a good recipe: technique, patience and really good ingredients make the difference!
Let's see how to prepare pizza dough with this easy recipe and enjoy crispy homemade pizzas or even a pizzapane (a crunchy flat bread).
Ingredients for 2 to 4 pizzas*
* this is the quantity I usually use to make 2 pizza in the oven tray.
500 gr flour (best made with Italian Tipo 00 flour)
3 gr dried yeast
200 gr lukewarm water
12,5 gr salt
15 gr olive oil
1/2 teaspoon sugar
Preparation
Tip: prepare the dough at least the day before. In this way it will have time to rise properly!
1. In a small bowl, dissolve the yeast with some lukewarm water (more or less 100 ml) and the sugar. Mix well and let rest until tiny bubbles appear on the surface.
2. Put the flour n a big bowl; make a hole in the middle and pour in the yeast. Using a fork, bring the flour in gradually from the sides and swirl it into the liquid, adding also the rest of the water. Knead roughly.
3. Now you can add the olive oil and the salt.
4. Work the mixture with your flour-dusted hands until you have a smooth springy dough.
5. Place the ball of dough in a large flour-dusted bowl and flour the top of it. Cover the bowl with a dish towel and place in a warm room for about an hour, until the dough has doubled in size.
6. Take the dough; divide it into 2/4 balls. Place the balls in a flour-dusted tray, leaving enough space between the dough balls. Cover with clingfilm. Let them rest for at least 90 minutes then transfer the tray in the fridge.
7. You can use the dough the day after or even the following days.
How to prepare pizza
In the pictures there are a few examples of the ingredients you may use:
1. pizza with tuna, shrimps, grilled zucchini and artichokes
2. pizza with speck, mushrooms, grilled zucchini, sweet corn
You can use whatever you like but remember: prepare everything before rolling out the dough.
Another tip: use Italian mozzarella instead of other types of cheese and use pure tomato sauce.
1. Preheat the oven to 250 degrees.
2. Roll the dough out into the shape of your pizza pan or oven tray, about 0,5 cm or thinner. Line the tray/pan with parchment paper before placing the dough in it.
3. Cover with a thin layer of tomato sauce.
4. Put in the oven until when the pizza starts to form bubbles.
5. Take it out of the oven and garnish the pizza with the ingredients you have already prepared.
6. Cook for 15/20 minutes. The base should be light brown.
