An easy and quick dessert, that you can eat as breakfast as well as a snack accompanied with a cup of tea. It's amazing spread with Nutella or, even better, with a home made raspberry jam.
250 gr plain flour
250 gr (greek) yogurt
125 gr sugar
80 gr butter
juice 1/2 lemon
3 eggs
2 teaspoons of vanilla extract
2 teaspoons baking powder
a pinch of salt
Preparation
1. Preheat the oven to 180 degrees
2. Melt the butter
3. With an electric mixer, beat well eggs with sugar.
4. Add the melted butter and yogurt. Stir well.
5. Add flour, baking powder, vanilla extract, salt and lemon juice. Mix well.
6. Line a loaf pan with parchment paper; transfer the mixture into the prepared pan. Bake for 35/40 minutes or until a thin knife inserted near the center comes out clean.
7. Let the cake cool and...enjoy it!
