CROSTINI WITH CHEESE, PEARS AND SPECK

What I miss the most in The Netherlands is the Italian aperitivo: meeting friends before dinner for a glass of good Prosecco or a spritz usually accompanied by stuzzichini, such as olives, crisps, nuts, cheese, sauce dips, little quiches or similar snacks.

What about doing it at home? Yes it's possible, easy and you don't need particular ingredients: just have a look at what's in your fridge and use your imagination!

But remember: l'aperitivo (aperitif, from the Latin aperire, or "to open,") should enhance the appetite before a meal. It shouldn't substitute your dinner ;)

When I opened the fridge to see what was in it, I found pears, cheese, speck, mustard and bread. Let's see together how to assemble everything.

Ingredients for 2 servings

2 slices of bread

2 types of cheese (I had once flavored with peppers and a normal one)
mustard
1/2 pear
speck (sliced)

Preparation

1. Cut the slices of bread into 4 pieces each one. Cut one type of cheese into thin slices.

Slice thinly also half pear.

2. Preheat a pan. Toast the bread on one side. Turn it, put on a slice of cheese and a slice of pear/speck. Cover the pan with a lid, lower the heat and let cook for a couple of minutes until when the bread is toasted on the bottom and and the cheese starts melting.

3. In the meantime, cut the other cheese in 4 dices. Prepare the plate as in the picture: put in the four edges the dices of cheese and a small amount of mustard; in the middle, put some slices of pear; finally add the crostini.

4. Eat immediately, accompanying with a good glass of wine or beer!
