PEPPER AND TWO LEGUME SALAD

We know that the lunch we bring to work from home tastes much more better than the salad or sandwich we'd end up buying in a supermarket.
But we also know that we want something really easy and fast to prepare the evening before. What about this pepper and two legume salad?

Pepper and two legume salad for a healthy packed lunch


Well...the picture probably doesn't look really inviting, but I can assure you that the taste is delicious!


Ingredients for two servings

250 gr canned chickpeas (drained weight)
250 gr canned lentils (drained weight)
1 red pepper
100 gr feta
pepper
vinegar, olive oil

Preparation

1.  Chop the pepper, put in pan with some olive oil and cook it until tender.
Tip: add one red onion. In this case, stew a bit the onion before adding the pepper. 

2. Mix chickpeas and lentils together. Season with pepper and add a drop of vinegar.

3. Chop also the feta and add it to the mix. let the pepper cool a bit then pour in the mixture. Stir well.

4. Your packed lunch is ready! Bring with you also a slice of bread and you'll have a healthy and balanced meal.

Tip: you can add other vegetables as green beans, tomatoes or whatever you find in your fridge!
