I discovered this way to serve goat's cheese almost one year ago, when my boyfriend ordered it in a restaurant here in Utrecht. It was delicious and once home I immediately started to search for a recipe explaining how to prepare it. Nothing! I found different versions of warm goat's cheese but no one looked like the dish we had in the restaurant.
I decided then to find it by myself. After several attempts I finally found out the right combination of ingredients and the cooking time!
Let's see together how to make this dish, that can be served as starter or second/main course.
Ingredients for 2 servings
2 thick round slices of goat's cheese
a handful of nuts
2 tablespoons of pine nuts
1/2 apple
1/2 lemon juice
rucola
iceberg lettuce (or another type that you like)
salt, pepper
olive oil
red cabbage (optional)
Preparation
1. Preheat the oven to 180 degrees.
2. Place the goat's cheese on a baking tray lined with parchment; put on top of each slice half a walnut. Sprinkle the cheese with olive oil.
3. Set the oven on grill mode; cook the cheese for almost 5 minutes or until it melts inside but it's still firmly outside.
4. In the meantime: cut the apple into sticks and sprinkle with some lemon juice; finely slice the iceberg salad; break the remaining walnuts into small pieces.
5. Mix rucola, iceberg salad and apple sticks; season with salt, pepper, olive oil and the remaining lemon juice.
6. Put the lettuce in the middle of a plate. Add pine nuts, walnuts and, if you like it, some red cabbage. Place the goat's cheese in the center.
