Last weekend I tried for the first time smoked mackerel, and I literally felt in love with it.
It is an oily fish, thus a good source of omega-3 fatty acids, that are important for our cardiovascular health because they help lower the levels of triglycerides and "bad" cholesterol in the blood.
With just a few ingredients you can have a tasty salad, perfect as complete packed lunch or dinner.
Ingredients (for 2 servings)
200 gr smoked mackerel broken into bite-size pieces
3 medium potatoes
two handfuls of mixed green salad (lettuce, rucola, mini romanasalat)
1/4 fennel, thinly sliced
1/4 granny smith apple, diced
1/4 cucumber peeled, halved lengthwise and thinly sliced
1 tablespoon of olive oil
1 tablespoon vinegar
salt, pepper
2 tablespoons cream or Greek yogurt
2 teaspoons mustard
Preparation
1. Wash the potatoes carefully and put them in a pot. Cover with cold water, add one teaspoon salt and bring water to boiling. Reduce heat to medium low or low. Cover the pan with a lid. Cook the potatoes in gently boiling water until tender. Drain and let them cool for a while. Peel and cut the potatoes into pieces.
2. Prepare the dressing: in a cup, mix well together vinegar, cream (or Greek yogurt) and mustard.
3. Put the salad in a big bowl and add the thinly sliced fennel, the cucumber and the apple. Lightly season with salt and pepper and drizzle on a tablespoon of olive oil. Toss gently until the salad is well mixed.
4. Divide the salad between two plates; arrange the potatoes on each and top with the mackerel. Drizzle over the mustard dressing and serve immediately.
