Easy to prepare, with just a few ingredients, is a personal reinterpretation of a traditional chocolate cake. Just forget milk and use a good chocolate stout!...that you will also serve as accompaniment.
200 gr unsweetened chocolate
3 eggs
80 gr butter
150 ml chocolate stout beer
90 gr plain flour
140 gr brown sugar
1 pinch salt
1 teaspoon baking powder
icing sugar
Directions
1. Preheat the oven to 180 degrees. Prepare a 23 cm round baking pan with parchment; set aside.
2. Place the butter and the chopped unsweetened chocolate in a metal bowl. Set the bowl over a saucepan of barely simmering water and stir until the chocolate is melted and smooth. Remove the bowl from over water and set aside.
3. Separate the egg yolks from the egg whites. Whip the egg whites (adding a pinch of salt) with an electric mixer until stiff.
4. In a large bowl, whisk egg yolk with brown sugar for 2 minutes or until well combined.
5. Add the melted chocolate and mix well. Incorporate the sifted flour with baking powder and slowly add the stout beer. Mix with electric mixer until well combined.
6. Pour the mixture in the lined pan. Bake for 40 minutes or until the tip of a knife comes out clean.
Do not overcook! It should remained moist inside.
7. Cool the cake for at least 30 minutes before serving.
Serving tip: cut the cake into blocks and dust with icing sugar.
