SAFFRON BISCUITS

Homemade biscuits are a special present for the persons you care the most. You can create lovely packages with one or different types of biscuits. 
This is why a few years ago I started to bake biscuits as Christmas gift. I like to try unusual recipes, with particular ingredients, as the one in this post that I found years ago on a magazine: biscuits with saffron. They are all but traditional: slightly sweet and savory biscuits - you will definitely love them!



Ingredients

200 gr all-purpose flour
170 gr butter - softened
80 gr sugar
1 gr saffron (for a cheapest version: 1 package of saffron powder)
1 teaspoon lemon juice
a pinch of salt

Preparation

1. In a big bowl, cream together the butter and the sugar until well combined. 

2. Add the sifted flour, a pinch of salt, the saffron and the lemon juice. Knead quickly the mixture until obtaining a smooth dough. Shape it into a flat disk. Wrap it in cling film and put it in the fridge for 3 hours.

3. Before taking the dough out of the fridge, preheat the oven to 150 degrees. 

4. Roll the dough 1 cm thick and cut with a cookie cutter. Place the biscuits on the oven tray (lined with parchment paper) and bake for 20 minutes, until the edges begin to brown.
Optional: dust them immediately with icing sugar.
