Apples are a perfect snack eaten row; but when used as an ingredient they can be transformed in delicious desserts! They combine perfectly with flavors such as cinnamon, vanilla, caramel.
My favorite apple-dessert is, without any doubt, the strudel!
It's really easy to make and it contains only few simple ingredients that match magically with apples.
It smells wonderful (also your house will be surrounded by the aroma of cinnamon and apple) and tastes even better if dusted with icing sugar. Served still warm with vanilla ice-cream is....simply divine!
shortcrust pastry (see here how to make it)
3 apples
raisins (optional; add to taste)
a handful of chopped nuts (walnuts, pine nuts, hazelnuts, etc.)
100 gr apricot jam
3 spoons brown sugar
1 teaspoon of cinnamon (or 2, if you like it!)
juice of 1/2 lemon
1 rusk
1 egg yolk for brushing
icing sugar
Preparation
1. Soak the raisin in warm water and/or rum (optional)
2. Preheat the oven to 180˚
2. Peel and chop apples
Tip: the ideal apple is Renetta Ruggine , a typical Italian variety poor in water; you can use also Elstar, for its sweet flavor.
3. In a bowl, toss together chopped apples with lemon juice, drained raisins, nuts mix, sugar, cinnamon and apricot jam.
4. Roll out the shortcrust pastry; crumble over the rusk (or the biscuits - this will help to keep the dough dry) and lay the filling on the top
5. Close the dough by wrapping up the filling carefully, make some cuts with a knife tip, brush with egg yolk.
6. Put in the oven and cook for 40 minutes.
7. Serve still warm, dusted with icing sugar.
Tip: serve with vanilla ice-cream or vanilla sauce...
