I love to call it torta cioccolatino, because its consistency is similar to that of chocolate pralines (cioccolatini): a humid, soft and creamy cake that melts in your mouth!
This easy and quick dessert is wonderful served at the end of a dinner with friends, or with a cup of tea. Even your partner won't certainly be disappointed if welcomed with this lovely cake after a long working day.
Though, I think that this is the perfect comfort food you desire in a cold and rainy day, when all what you need are cuddles and something really rich in chocolate (as I say in Italian: qualcosa di davvero cioccolatoso)...it'll warm up your soul!
(for a 26cm round backing pan or rectangular pan)
200 gr dark chocolate
200 gr sugar
4 eggs
80 gr butter
125 gr Greek yogurt or quark
a pinch of salt
vanilla (optional)
4 spoons of plain flour
Preparation
1. Preheat the oven to 180˚
2. Chop the chocolate and melt it with butter in the microwave or slowly over low heat
3. Separate the egg yolks from the egg whites
4. Whip the egg whites (adding a pinch of salt) with an electric mixer until stiff
5. In a large bowl, whisk egg yolk with sugar for 2 minutes. Then add yogurt and the melted chocolate. Mix until well combined
6. Add flour and vanilla. Mix well
7. Fold beaten egg whites into the mixture.
Be careful! If you don't want to deflate the egg whites, stir with a spatula from bottom to top.
8. Pour the mixture in a pan lined with baking paper.
9. Bake your cake for 25/30 minutes.
It will be ready when a cake-tester (or the tip of a knife) comes out clean.
Tip: do not overcook the cake otherwise you will lose its characteristic moisture.
10. Cool the cake for at least 30 minutes before serving.
Serving tip: cut the cake into blocks and dust with icing sugar.
!!! Do not worry if the cake cracks on the top: it's normal !!!
11. Close your eyes and enjoy the scioglievolezza of your Dark Chocolate Cake :)
